Amarone della Valpolicella DOCG Classico “Pruviniano” 2021 – MAGNUM

Amarone Pruviniano belongs to Domini Veneti’s collection of site selections, bottlings that read the Veronese hills parcel by parcel rather than as one blend. It follows the classic Amarone path: bunches of Corvina and its traditional partners are picked ripe and rest for months on racks in the drying lofts, concentrating sugar, colour and aroma before a slow winter fermentation to full dryness and aging in wooden casks.
In the glass it brings dried morello cherry and fig, cocoa, sweet spice and a warm, velvety weight balanced by the gentle bitter twist typical of Veronese reds. It is a wine for the biggest plates on the table: pastissada de caval or another long braised dish, roast game, or aged mountain cheeses, and in Venice it sits happily beside fegato alla veneziana. Serve at 18 °C in wide glasses; an hour in a decanter helps it open fully and repay the wait.

Domini Veneti is the premium label of Cantina Valpolicella Negrar, a growers’ cooperative founded in 1933 in the heart of the Valpolicella Classica.
