Vintage 2021
From the vintage reports of the Consorzio Tutela Vini Valpolicella
A changeable year that ended well: a dry September gave healthy grapes.
A changeable season with late flowering and a dry September that gave healthy grapes.
March was very dry; April and May brought about 210 mm, close to normal, and June almost none. July to September had about 200 mm, some 50 mm below the average. Flowering came about ten days late and veraison about nine days late. Downy mildew needed precise work in May and June, and powdery mildew caused modest damage in a few sensitive spots. Dry weather in September kept botrytis away, and picking began around 15 September.
Valpolicella DOC Classico Superiore 2021 by Rubinelli Vajol
A balanced blend of tradition and refinement, the Valpolicella DOC Classico Superiore by Rubinelli Vajol offers a taste of the Veronese hills in every sip. Crafted from 50% Corvina, 25% Corvinone, 15% Rondinella, 5% Molinara, and 5% Oseleta, this wine embodies the harmony of classic varietals. Cultivated using a combination of Pergola Veronese and Guyot methods on soils rich in limestone, tufa, and clay, the vines thrive in an environment that enhances the wine’s depth and character.
Winemaking Process
Hand-harvested grapes are carefully fermented in stainless steel tanks at controlled temperatures, followed by ageing in large oak barrels. This process preserves the freshness of the fruit while adding layers of complexity and depth.
Tasting Notes
Color: Vibrant ruby red.
Bouquet: Inviting floral aromas are the first to greet you, soon followed by vivid notes of sour cherry and red fruits. Hints of spices such as pepper, tamarind, and vanilla add further intrigue.

Rubinelli Vajol traces its roots to the early 1900s when founder Gaetano Rubinelli, after constructing the Chievo Dam on the Adige River, acquired land in the center of Valpolicella Classica. Over time, the family began to produce wine in a traditional country complex with stone-built cellars. Today, all grapes, Corvina, Corvinone, Rondinella, Molinara, and Oseleta, come from a unified stretch of vineyards bordering Corte Sant’Anna, forming the basis for five classic labels: Amarone, Ripasso, Valpolicella Classico Superiore, Valpolicella Classico, and Recioto.
Wine production respects the slow rhythm of maturation, starting with the vines that thrive on stony, lime-rich soils. Grapes destined for Amarone and Recioto are gently dried in on-site lofts, ensuring concentration of flavors. Fermentation proceeds in conditions that balance tradition and practicality: cool, stable temperatures in the cellars built against the hillside allow a gradual conversion of sugars and help preserve character. Long aging then takes place in large French and Slavonian oak barrels (30 or 50 hectoliters), which maintain the distinct aromas of each variety without dominating them.
Every bottle is numbered, reflecting close attention in both vineyard and cellar. Emphasis is placed on methods handed down through generations, yet improved by thoughtful innovation, resulting in wines that capture the Valpolicella character in every glass.
