Stars from the Consorzio Tutela Vini Valpolicella, for Amarone della Valpolicella
A very good year. A dry spring, then a very rainy summer; quality varied from area to area.
An uneven year: dry until flowering, then very wet, with a harvest that varied from area to area.
January to May was drier and slightly warmer than usual. June to August brought 575 mm of rain at San Pietro in Cariano and 461 mm at Illasi, against about 230 mm in a normal year, with some hail in June and August. Downy mildew pressed hard after the rains, luckily once fruit set was over; later, botrytis and rot needed care, helped by the September weather. Picking began around 13 September.
Valpolicella Ripasso DOC Classico Superiore “Le Poiane” by Bolla
The Valpolicella Ripasso Le Poiane Bolla is born from the expert “ripasso” technique, where Valpolicella Classico is refermented on the pomace of Amarone or Recioto. This process gives the wine greater complexity, structure, and smoothness, enriching it with spicy and toasted notes.
The Story Behind the Name: La Poiana (the buzzard) is a bird of prey frequently seen in our vineyards, symbolizing an intact and vibrant environment where vines alternate with wooded areas. The wine is made from grapes from our hillside vineyards in Valpolicella Classica, selected over more than twenty harvests for fruit expression and tannin elegance. Vinification follows the traditional Veronese Ripasso method interpreted in a modern way.
Vinification and Aging: Grapes are hand-harvested at the end of September and refermented in winter on the pomace of Amarone and Recioto. Harvesting began in mid-September. The manual selection of grapes for Amarone led to no more than 40% of the clusters per vine being dried in the drying loft. The remaining grapes continued ripening on the vine for another 20 days and were then hand-harvested in early October to be vinified for the Valpolicella Classico Superiore, the base of Le Poiane.
In February, the dried grapes were brought to the winery and vinified to produce Amarone, whose pomace was then added to the Valpolicella wine. Thanks to a second alcoholic fermentation, this Ripasso was created. The refermentation on the sweet, Amarone-soaked pomace enriched the wine with color, structure, and aromas.
Grape varieties and origin: Corvina, Corvinone, Rondinella. The vineyards are located in the classic zone, mainly on the hills of Marano and Negrar.
Tasting notes: Deep ruby red. On the nose, it reveals cherry and plum aromas, enhanced by spicy and vanilla notes. The palate is velvety and enveloping, with soft tannins and good aromatic persistence.
Food pairings: Pairs well with rich and flavourful dishes, such as roasted red meats and aged cheeses. Also ideal with first courses featuring meat or mushroom ragù.

Founded in 1883 by Alberto Bolla , the winery soon gained recognition when he began supplying local white wine to taverns in Soave, then expanded to Verona and Venice, where the family opened a restaurant in 1902. In the 1930s, Alberto’s oldest son Giorgio, an oenologist, drove a shift toward high-quality red wines, prompting the creation of the Pedemonte site in Valpolicella Classica . This facility produced Recioto, Valpolicella, and later Amarone, alongside the well-regarded Soave from the original cellar.
In the 1940s, Valpolicella was already known for appassimento wines, especially the sweet yet balanced Recioto. Occasionally, complete fermentation produced a dry outcome known as Amarone, which Alberto Bolla privately kept in what he called the Nonno cellar. Realizing its potential, Giorgio released the first “Amarone del Nonno” in 1950 as a special birthday gesture for Alberto. That bottling paved the way for Amarone’s global reputation as one of Verona’s most prized reds.
In 2006, Gruppo Italiano Vini purchased Bolla Winery to uphold the family’s emphasis on quality-driven processes, enthusiasm for winemaking, and respect for local growing areas.
Today, the estate encompasses over 300 hectares of vineyards in Valpolicella Classica, the Soave zone, and the Lake Garda region. A network of about 100 grape-growing families, collaborating across three generations, remains crucial in shaping wines that balance time-honoured methods with changing tastes.
