Description

Valpolicella Ripasso DOC Superiore “Ciliegi” by Ilatium

The Valpolicella Ripasso DOC “Ciliegi” 2020 by Ilatium Morini comes from vineyards in Mezzane di Sotto, Valpantena and Valle d’Illasi, on clayey calcareous soils at over 150 metres above sea level, trained in Guyot. The blend is composed of Corvina and Corvinone (70%), Rondinella (20%), and Croatina with other native varieties (10%), all from vines over 10 years old. Harvest takes place in the first ten days of October, with grapes hand-picked and carefully placed in bins.

After destemming and crushing, fermentation proceeds under controlled temperatures with pump-overs for 12 to 15 days. The wine then undergoes a second fermentation on Amarone grape skins — the traditional Ripasso technique — which deepens structure, aromatic complexity and richness. Ageing continues for 24 months in 500-litre French and American oak barrels, followed by 8 months of bottle refinement.

In the glass, it shows a ruby red with light garnet reflections. The nose is intense and layered, with cherries in syrup, blueberry jam, spice, and hints of liquorice and vanilla. On the palate it is enveloping and persistent, carried by lively tannins and a fresh finish. At 14% alcohol, it balances ripeness and structure with elegance and easy drinkability.

It pairs beautifully with braised veal cheek with aromatic herbs, pork fillet with mustard, and pumpkin flan with cheese fondue.

About Ilatium

Ilatium Morini is rooted in Val di Mezzane, where vineyards surround an early 1900s farmhouse that inspired Luigi and Giuseppe Morini in 1980. Their plan was straightforward: pool their lands and tend the grapes previously sent to the local cooperative. Over time, seven Morini siblings and cousins came together, blending forward-looking ideas with the family's time-honoured methods.
In 1992, additional vineyards were acquired near the farmhouse, laying the groundwork for the official founding of Ilatium Morini in 2001. Two years later, the first wine label was released, with the original bottle still held in the family archive. As the estate outgrew its first facility, a new, purpose-built winery opened in 2006, followed by further expansion in 2020 with the restoration of the farmhouse to house a Wine Shop and tasting rooms.
Harvesting remains entirely hands-on, with careful grape selection carried through every stage, from drying to pressing and fermentation. A range of oak barrel sizes draws out each wine's layers of flavour, including unexpected nuances. The estate spans La Calle, Sottomonte, Forade, Ai Progni, Leòn, Mezzane ai Monti, Grezzana and l'Olivara, each plot bringing its own distinct character. This balance of tradition and forward thinking defines Ilatium Morini's approach to authentic Verona winemaking.
