Stars from the Consorzio Tutela Vini Valpolicella, for Amarone della Valpolicella
An exceptional year. A hot, dry summer and an early harvest of very healthy grapes.
A year of extremes: record heat and little rain, with healthy grapes and an early harvest.
The winter was warm, and the following months set twenty year records for maximum temperatures, July above all. April and July were very dry. Flowering came early, in late May and early June, and the heat of July and August did not slow ripening. The hot, dry weather kept downy mildew, powdery mildew and botrytis away, while careful vineyard work eased the stress on the vines. Harvest from about 10 September.
Verona IGT “Oseleta” 2015 by Zymé
Zymé continue to push the Valpolicella envelope with this unique wine made entirely from the local oseleta grape variety. Few winemakers believe as passionately in and work as hard as Zymé towards the unlocking of the potential of autochthonous grapes of the region, and it shines through in this, very dry, very fresh, and terrifically terroir-expressive wine.
Assemblage: Oseleta 100%
Winemaking: The best grapes are harvested relatively late, in the first 20 days of October, then destemmed, crushed and fermented with indigenous yeasts for 15 days. The wine then goes into oak for at least 36 months, and an extra year’s ageing in the bottle before release.
Alcohol: 13,5%
Colour: A deep violet colour, but with less opacity and more garnet over time.
Aroma: Lifted berry-fruit with a distinctive crunchy edge reminiscent of cranberries, along with a distinct forest-floor note and a pencil-shavings hint rather like petit verdot.
Palate: Powerful but subtle, notable tannins and zingy acidity that has integrated and interbalanced beautifully over the years.

Celestino Gaspari is at the core of Zýmē Winery’s identity and success in Valpolicella. Growing up in nearby Val d’Illasi, he learned the practical aspects of viticulture early on by working with his family, while formal studies in agronomy refined his technical skills. At 20, a pivotal opportunity arose when he began working with Giuseppe Quintarelli, a renowned figure in Veneto winemaking, where he not only mastered key production techniques but also formed a personal connection by becoming Quintarelli’s son-in-law. This period shaped his philosophy and set the stage for his future projects.
In 1999, Gaspari put his extensive knowledge to use by converting an ancient 15th‑century sandstone quarry in San Pietro in Cariano into the modern facilities of Zýmē Winery. The winery, named after the Greek word for yeast, symbolizes the natural fermentation process and serves as a reminder of the land’s enduring influence. The cellar’s design, with stone cladding and strategically placed steel openings that mirror the contours of a vine leaf, echoes both the local environment and the winery’s guiding principles.
Zýmē Winery spans 30 hectares of vineyards and produces roughly 150,000 bottles annually while adhering to sustainable agricultural practices and environmental care. Gaspari’s balanced approach combines time-honored techniques with careful experimentation. His methodical work has allowed him to capture the inherent qualities of the indigenous grape varieties and soils of Valpolicella, contributing significantly to the region’s reputation on the international stage.
Under Gaspari’s leadership, Zýmē Winery is recognized for its commitment to authenticity and quality. The wines are a true reflection of the local terroir, blending historical practices with modern methods to create products that stand as a reliable expression of Valpolicella’s unique character.
